Although these images are sanitized and romanticized in American popular culture, they represent the untold stories of enslaved men and women who had a significant impact on the nation's culinary and hospitality traditions even as they were forced to prepare food for their oppressors. Kelley Fanto Deetz draws upon archaeological evidence, cookbooks, plantation records, and folklore to present a nuanced study of the lives of enslaved plantation cooks from colonial times through emancipation and beyond. She reveals how these men and women were literally 'bound to the fire' as they lived and worked in the sweltering and often fetid conditions of plantation house kitchens. These highly skilled cooks drew upon skills and ingredients brought with them from their African homelands to create complex, labor-intensive dishes such as oyster stew, gumbo, and fried fish. However, their white owners overwhelmingly received the credit for their creations. Focusing on enslaved cooks at Virginia plantations including Thomas Jefferson's Monticello and George Washington's Mount Vernon, Deetz restores these forgotten figures to their rightful place in American and Southern history. Bound to the Fire not only uncovers their rich and complex stories and illuminates their role in plantation culture, but it celebrates their living legacy with the recipes that they created and passed down to future generations"--Provided by publisher. 588 0 Print version record. 590 eBooks on EBSCOhost|bEBSCO eBook Subscription Academic Collection - North America 650 0 Enslaved persons|0https://id.loc.gov/authorities/subjects/ sh85123347|zVirginia|0https://id.loc.gov/authorities/names /n79022909-781|xSocial life and customs.|0https:// id.loc.gov/authorities/subjects/sh2001008851 650 0 Enslaved persons|0https://id.loc.gov/authorities/subjects/ sh85123347|zVirginia|0https://id.loc.gov/authorities/names /n79022909-781|xSocial conditions.|0https://id.loc.gov/ authorities/subjects/sh2001008850 650 0 African American cooking|0https://id.loc.gov/authorities/ subjects/sh85031771|xHistory.|0https://id.loc.gov/ authorities/subjects/sh99005024 650 0 Cooking, American|xHistory.|0https://id.loc.gov/ authorities/subjects/sh2009121789 650 0 African Americans|0https://id.loc.gov/authorities/subjects /sh85001932|xFood|0https://id.loc.gov/authorities/subjects /sh99005367|zVirginia|0https://id.loc.gov/authorities/ names/n79022909-781|xHistory.|0https://id.loc.gov/ authorities/subjects/sh99005024 650 0 African American cooks|0https://id.loc.gov/authorities/ subjects/sh87006131|zVirginia|0https://id.loc.gov/ authorities/names/n79022909-781|xHistory.|0https:// id.loc.gov/authorities/subjects/sh99005024 650 0 African American cooks|0https://id.loc.gov/authorities/ subjects/sh87006131|zVirginia|0https://id.loc.gov/ authorities/names/n79022909-781|vBiography.|0https:// id.loc.gov/authorities/subjects/sh99001237 650 0 Enslaved persons|0https://id.loc.gov/authorities/subjects/ sh85123347|zVirginia|0https://id.loc.gov/authorities/names /n79022909-781|vBiography.|0https://id.loc.gov/authorities /subjects/sh99001237 650 0 Plantation life|0https://id.loc.gov/authorities/subjects/ sh85102824|zVirginia|0https://id.loc.gov/authorities/names /n79022909-781|xHistory.|0https://id.loc.gov/authorities/ subjects/sh99005024 650 7 Enslaved persons.|2fast|0https://id.worldcat.org/fast/ 1120522 650 7 Manners and customs.|2fast|0https://id.worldcat.org/fast/ 1007815 650 7 Social conditions.|2fast|0https://id.worldcat.org/fast/ 1919811 650 7 African American cooking.|2fast|0https://id.worldcat.org/ fast/1752736 650 7 History.|2fast|0https://id.worldcat.org/fast/958235 650 7 Cooking, American.|2fast|0https://id.worldcat.org/fast/ 1753224 650 7 African Americans.|2fast|0https://id.worldcat.org/fast/ 799558 650 7 Food.|2fast|0https://id.worldcat.org/fast/930458 650 7 African American cooks.|2fast|0https://id.worldcat.org/ fast/799122 650 7 Plantation life.|2fast|0https://id.worldcat.org/fast/ 1065779 650 7 Race relations.|2fast|0https://id.worldcat.org/fast/ 1086509 651 0 Virginia|0https://id.loc.gov/authorities/names/n79022909 |xRace relations|0https://id.loc.gov/authorities/subjects/ sh00007552|xHistory.|0https://id.loc.gov/authorities/ subjects/sh99005024 651 7 Virginia.|2fast|0https://id.worldcat.org/fast/1204597 655 4 Electronic books. 655 7 Biographies.|2fast|0https://id.worldcat.org/fast/1919896 655 7 History.|2fast|0https://id.worldcat.org/fast/1411628 655 7 Biographies.|2lcgft|0https://id.loc.gov/authorities/ genreForms/gf2014026049 776 08 |iPrint version:|aDeetz, Kelley Fanto.|tBound to the fire. |dLexington, Kentucky : The University Press of Kentucky, 2017|z9780813174730|w(DLC) 2017029779|w(OCoLC)974470579 856 40 |uhttps://rider.idm.oclc.org/login?url=http:// search.ebscohost.com/login.aspx?direct=true&scope=site& db=nlebk&AN=1470816|zOnline eBook via EBSCO.
