The human species is the only one that takes milk from other animals and consumes it beyond weaning age. Cultures of Milk contrasts the practices of the world's two leading milk producers, India and the United States. In both countries, milk is considered to have special qualities. Drawing on ethnographic and scientific studies, popular media, and government reports, Andrea Wiley reveals that the cultural significance of milk goes well beyond its nutritive value. Shifting socioeconomic and political factors influence how people perceive the importance of milk and how much they consume. In India, where milk is out of reach for many, consumption is rising rapidly among the urban middle class. But milk drinking is declining in America, despite the strength of the dairy industry. Milk is bound up in discussions of food scarcity in India and food abundance in the United States. Promotion of milk as a means to enhance child growth boosted consumption in twentieth-century America and is currently doing the same in India, where average height is low. Wiley considers how variation among populations in the ability to digest lactose and ideas about how milk affects digestion influence the type of milk and milk products consumed. In India, most milk comes from buffalo, but cows have sacred status for Hindus. In the United States, cow's milk has long been a privileged food, but is now facing competition from plant-based milk."--Publisher's description. 588 0 Print version record. 590 eBooks on EBSCOhost|bEBSCO eBook Subscription Academic Collection - North America 650 0 Milk|0https://id.loc.gov/authorities/subjects/sh85085317 |xSocial aspects|0https://id.loc.gov/authorities/subjects/ sh00002758|zUnited States.|0https://id.loc.gov/authorities /names/n78095330-781 650 0 Milk|0https://id.loc.gov/authorities/subjects/sh85085317 |xSocial aspects|0https://id.loc.gov/authorities/subjects/ sh00002758|zIndia.|0https://id.loc.gov/authorities/names/ n80125948-781 650 0 Milk|0https://id.loc.gov/authorities/subjects/sh85085317 |zUnited States|0https://id.loc.gov/authorities/names/ n78095330-781|xHistory.|0https://id.loc.gov/authorities/ subjects/sh99005024 650 0 Milk|0https://id.loc.gov/authorities/subjects/sh85085317 |zIndia|0https://id.loc.gov/authorities/names/n80125948- 781|xHistory.|0https://id.loc.gov/authorities/subjects/ sh99005024 650 0 Dairy products|zUnited States|0https://id.loc.gov/ authorities/subjects/sh2009122759|xHistory.|0https:// id.loc.gov/authorities/subjects/sh99005024 650 0 Dairy products|0https://id.loc.gov/authorities/subjects/ sh85035453|zIndia|0https://id.loc.gov/authorities/names/ n80125948-781|xHistory.|0https://id.loc.gov/authorities/ subjects/sh99005024 650 0 Food preferences|0https://id.loc.gov/authorities/subjects/ sh85050304|zUnited States.|0https://id.loc.gov/authorities /names/n78095330-781 650 0 Food preferences|0https://id.loc.gov/authorities/subjects/ sh85050304|zIndia.|0https://id.loc.gov/authorities/names/ n80125948-781 650 2 Milk.|0https://id.nlm.nih.gov/mesh/D008892 650 2 Cross-Cultural Comparison.|0https://id.nlm.nih.gov/mesh/ D003431 650 2 Socioeconomic Factors.|0https://id.nlm.nih.gov/mesh/ D012959 650 7 Milk|xSocial aspects.|2fast|0https://id.worldcat.org/fast/ 1021650 650 7 Milk.|2fast|0https://id.worldcat.org/fast/1021615 650 7 History.|2fast|0https://id.worldcat.org/fast/958235 650 7 Dairy products.|2fast|0https://id.worldcat.org/fast/886959 650 7 Food preferences.|2fast|0https://id.worldcat.org/fast/ 930981 651 2 India.|0https://id.nlm.nih.gov/mesh/D007194 651 2 United States.|0https://id.nlm.nih.gov/mesh/D014481 651 7 United States.|2fast|0https://id.worldcat.org/fast/1204155 651 7 India.|2fast|0https://id.worldcat.org/fast/1210276 655 4 Electronic books. 655 7 History.|2fast|0https://id.worldcat.org/fast/1411628 776 08 |iPrint version:|aWiley, Andrea S., 1962-|tCultures of milk.|dCambridge, Massachusetts : Harvard University Press, 2014|z9780674729056|w(DLC) 2013043044|w(OCoLC)861478439 856 40 |uhttps://rider.idm.oclc.org/login?url=http:// search.ebscohost.com/login.aspx?direct=true&scope=site& db=nlebk&AN=663463|zOnline eBook.
